Peel carrots, celery root and potatoes. Cut everything into cubes. Squash and leek cut into slices. Heat half a volume of olive oil in a skillet and fry the leeks and potatoes for 2 minutes, stirring regularly. Add carrots, celery, zucchini, thyme and rosemary and mix for 2 minutes. Fill with cold water and bring to a boil. Boil for 1 hour, stirring occasionally. Salt it. Add olive oil and chopped parsley. Stir. Serve hot or warm. Pepper before serving.
