Bread and butter three hours before cooking, put in the freezer.

Meat is passed through a meat grinder twice. Crust and part of the crumb coarsely rubbed. Cut the remaining half into slices, pour in cream, and when it swells, add to the mince. Salt, pepper, mix thoroughly, add finely chopped butter. Put the stuffing in the fridge for two hours.

Sculpt the patties, roll in bread, fry crispy in a mixture of vegetable and butter.
