  • fresh anchovies - 0.5 kg;
  • lemon - 1 pc .;
  • orange - 1 pc .;
  • pine nuts - 50 g;
  • olives - 50 g;
  • breadcrumbs;
  • olive oil.

First you need to clean the carcass, do it at all is easy. It is necessary to remove the insides and ridge. It separates easily, resulting in a beautiful fillet. Half of the total number of carcasses should be laid out in a parchment-shaped form, seasoned with spices, sprinkle with finely chopped olives, crushed nuts and lay out sliced ​​lemon.

Next, you need to make another one of the same layer, but instead of lemons sprinkle with breadcrumbs, and pour with olive oil.

Send all this delicacy for 10 minutes in the oven, and in the meantime prepare the pouring. For it you need to squeeze the juice from the orange, and after 10 minutes, pour into the dish. With the sauce, it will cook another 15 minutes, until the liquid has evaporated.


This is a classic French salad, whose name translates as "salad from Nice." It will require:

  • green salad - 5-6 sheets;
  • tomatoes - 3 pcs .;
  • onion - 2 pieces;
  • olives - 50 g;
  • salted anchovies - 200 g;
  • egg - 3 pcs.

For sauce:

  • olive oil - 5 tbsp. l .;
  • wine vinegar - 1 tbsp. l .;
  • garlic - 1 clove;
  • fresh basil;
  • spice.

Often, sweet pepper, tuna and green beans are also added to the ingredients, but we offer the traditional option.

How to cook it? Everything is very simple - the products need to be cut into large chunks and season with sauce. For him, mix the oil with vinegar, put a few green basil leaves, squeeze the garlic and season with spices.

It is worth noting that if you get too salty anchovies, then they need to be washed and soaked in water.

Sandwich Pasta

Many people call it herring paste, but anchovy pasta still has a different taste from herring. It can be used for sandwiches and toast, and as a filling for pizza and even pies.

Will be needed:

  • Anchovies in oil - 150 g;
  • garlic - 2 cloves;
  • parsley;
  • wine vinegar - 1 tbsp.

Put the anchovies in a blender together with greens and garlic, beat until smooth, add vinegar and a little oil from the jar so that the mass has the consistency of the paste.Transfer to a glass container and send to a refrigerator.

Tomato soup

It turns out that you can even cook first courses with these small fish. Especially favored tomato and fish soup in Spain. Prepare it from such ingredients:

  • vegetable broth - 1st;
  • tomatoes in its own juice - 500 g;
  • fillet of anchovies in oil - 5 pcs .;
  • onions - 1 pc .;
  • garlic - 2 cloves;
  • spice.

From tomatoes to mash, chop onion, garlic and fish. In a saucepan, pass the onions in vegetable oil, put the garlic and anchovies, fry a little. Pour tomato puree and broth, cook for 20 minutes. After cooking, beat the soup using an immersion blender, put spices (if it turned out to be sour, you can add a little sugar) and serve with croutons.

Anchovies are not only tasty, but also very useful product.
