How to make delicious Megrelian khachapuri

Megrelian Khachapuri is a cake made of yeast, puff or kefir dough with a fragrant cheese crust. For the filling, you can take different sorts of cheeses, but most often they use suluguni.

Megrelian khachapuri recipe from yeast dough

Yeast dough is cooked longer, but baking from it turns out especially soft and lush. For the filling, you can use not only pure suluguni, but also mix it with cheese. See below for photos of Megrelian khachapuri.

Cooking process:

  1. sift 200 g of flour into a deep bowl, add sugar, salt and yeast to it, mix everything up;
  2. in a separate container bring the milk to the boil, dissolve the butter in it, cool to room temperature and pour into the flour mixture;
  3. mix the dough well with a whisk, break all the lumps, add vegetable oil;
  4. knead the elastic dough, gradually adding the remaining flour. It should not stick to hands;
  5. put it in a warm place for an hour;
  6. for the filling, grate suluguni on a coarse grater;
  7. 4 tbsp. l Cheese set aside to sprinkle khachapuri, in the rest, add sour cream and mix well;
  8. divide the risen dough and cheese mass into 4 pieces, roll each into a circle;
  9. roll the cheese into balls and place in the center of each circle;
  10. fasten the edges of the circle and form a bag of dough, then roll it from both sides into a cake with a thickness of 1 cm;
  11. beat the egg, salt it a little and grease the surface of the khachapuri, sprinkle with grated cheese;
  12. Place on a baking sheet covered with parchment, send to the oven for 20-25 minutes. at 220ºC until golden brown.

Serve fresh greens on the table, cooling the dish to room temperature.

Megrelian khachapuri on kefir

Khachapuri in this recipe is prepared without yeast. You will need the following products:

  • sour cream - 0.5 stack .;
  • kefir - 0.5 stack .;
  • flour - 300 g .;
  • salt - 0.5 tsp;
  • butter - 80 g .;
  • sugar - 1 tsp;
  • soda - 0.5 tsp;
  • egg - 1 pc. for lubrication;
  • Suluguni - 300 g

Flour can take more than a recipe. The dough should be soft and elastic.Walkthrough:

  1. pour kefir into a bowl, add soda to it, wait until it is extinguished;
  2. add warm melted butter, sour cream, sugar and flour, knead the dough;
  3. rub suluguni;
  4. Roll out the cake, place the cheese in the center, leaving a little of it for sprinkling;
  5. Pinch the edges of the cake, flip it over and roll it out.

Put on a baking sheet covered with baking paper, brush with a beaten egg and sprinkle with the remains of cheese. Bake khachapuri at 200ºC until golden brown for about 25 minutes. Serve warm.
