Ingredients:

  1. 1 rabbit weighing about 1.4 kg;
  2. 250 g brisket;
  3. 400 g of mushrooms;
  4. 2 bulbs
  5. 1 green apple
  6. 50 g of pitted prunes
  7. 4 tbsp. l. butter;
  8. 2 tbsp. l. flour;
  9. 2 tbsp. l. low-fat cream;
  10. salt, freshly ground black pepper.

For the marinade:

  1. 200 ml of dry white wine;
  2. 3 sprigs of thyme;
  3. 1 bay leaf;
  4. 6-7 juniper berries;
  5. 7 black peppercorns.

For the test:

  1. 2.5 cups of flour;
  2. 200 g of kidney fat;
  3. 2 tsp. baking powder; pinch of salt.

Cooking

Prepare the marinade in advance. Crush juniper berries and peas with the flat side of a knife. Thyme slightly pound between the palms. Mix all the ingredients in a flat bowl. Cover with foil and let the marinade stand at room temperature for 1 hour.

Cut the rabbit into pieces and cut off the meat from the bones where it is possible, mainly from the back part - «saddle» and legs.Put all the cut meat (the pieces should be small) in the marinade, cover with foil and refrigerate for 2-3 hours.

Place the remaining bones in a saucepan, pour 1 l of cold water and bring to a boil over medium heat. Remove the foam, salt, reduce heat to a minimum and cook for 1.5 hours. Completely cook the broth, then strain.

Peel the onions and cut them into small cubes. Cut the brisket into cubes with a side of 1.5 cm, put in a saucepan with a thick bottom and heat the fat on low heat for 7-10 minutes. Add the onions and cook, stirring for 10 minutes, preventing the onions from frying strongly.

Clean mushrooms, remove legs (they will not need this dish). Caps cut into halves or quarters, if the mushrooms are large. Add to the pan, salt, increase the fire to medium. Cook for 10 minutes, stirring.

Remove and dry the marinated rabbit meat, save the marinade. Heat 2 tbsp in a pan. l. butter, portions of fry pieces of rabbit from all sides until golden brown.Put the finished pieces in a saucepan with onions and mushrooms.

Pour marinade and 2 cups of broth into the pan. Bring to a boil, cover and cook over a very low heat, 1 hour. After 30 minutes. add peeled and pitted and cut into large pieces of apple and prunes cut into large strips.

With a heavy knife, chop the kidney fat as finely as possible, mix it in a bowl with flour and salt. Gradually add as much cold water as possible to get a soft, elastic dough that does not stick to your hands; carefully knead, 10-15 min. Separate a small piece from the dough (a little less than a quarter).

Roll out the main piece of dough in a circle of the same diameter as the form in which the cake will be baked. Cut a long strip 2 cm wide from the remaining quarter of the dough, moisten the edge of the form with water and stick a strip to it. If there is still a dough left, you can make decorations for the pie (for example, leaves or hares).
