Eggplant Baked with Nuts

You will need
  • - Fresh eggplant 2 pcs .;
  • - pine nuts 2 tablespoons l .;
  • - Onions 1 pc .;
  • - sour cream 250 g;
  • - vegetable oil 4 tablespoons;
  • - a little fragrant saffron;
  • - a few leaves of mint;
  • - black pepper and salt to your taste.
Eggplants, rinse well and pierce with a fork from all sides. Bake them in this form for about 50 minutes, heat the oven to 210 degrees. Next, remove the finished fruit, cool it. Pour the saffron into a small plate and pour 3 tablespoons of hot water, mix everything thoroughly.
Wash, peel and peel the onions in small pieces. Pour butter into a frying pan, pour onion and salt, stir. Cook it until golden.
Carefully remove the pulp from the eggplant and place it in a small sieve. Using a spoon, press it down to make the glass water. Put this pulp in a separate plate and add sour cream to it, mix the ingredients thoroughly.
Then put onion and saffron in the pulp, mix everything.Salt the prepared mass and pepper a little to your taste. Before serving, sprinkle it with chopped pine nuts and garnish with mint.
